Chef Joel Viehland To Open 'The Pine Leaf' In New Milford

James Beard nominated Chef Joel Viehland is opening The Pine Leaf in New Milford, CT this April. Serving seasonal light breakfast and lunch with outdoor seating over the Aspetuck River, the cafe will also be hosting pop-ups and guest chef dinners at night.

With the long term goal being to open a restaurant in Kent towards the end of the summer, Viehland says "I need to work while that is under construction. So, I decided to open this little experimental cafe where I have the freedom to serve really great soups, salads and sandwiches and also do some great little events and pop-up dinners all spring and summer long."

And if you're wondering where the name came from, Pine Leaf comes from the first ever female Native American Indian Chief who is infamous for killing over 100 men, according to Viehland.

The cafe will open the first week of April at 354 Litchfield Rd, New Milford, CT.  Viehland is the former Executive Chef of Community Table and has also spent time at Noma in Copenhagen.
