For ten years the folks at Fairfield Cheese Company have worked to bring the best examples of artisan cheese to their community and to teach you about them. They have touted the deliciousness of artisan cheese and have tried to challenge your palate and shape your cheese choices. They do this from behind the counter every day and in their popular Cheese School classes. This May marks their tenth anniversary, and as they look back, they are looking forward. What will the next ten years look like for cheese lovers? On this night they welcome Mateo Kehler of Jasper Hill Farm to talk about the importance of eating raw milk cheese. As our food and shopping choices become standardized and biodiversity wanes there is a chance that we could lose the foods we love. Foods like raw milk cheese are a direct reflection of the people, the animals, and the landscape in which they are produced and if we don't consciously choose to eat them, the food and the community that created it will cease to exist. The loss of deliciousness is an ever-growing reality so join in and hear how your choices at the cheese counter and farmer's markets can ensure good food remains an option.
