Strawberry and Ricotta Toasts

The ultimate combination of sweet and salty, fruit and ricotta toast is perfection. While it does require assembly, this easily packed snack is definitely picnic appropriate. 

Before you hit the road, cut and toast as many small slices of baguette as you think you'll need (and pack more than you think - these are a hit!) Then pack together your honey (use local whenever possible!), ricotta, crushed pistachios and sliced fruit in easily accessible containers. *Don't forget serving utensils! 

Load up your toasts with creamy ricotta and sliced fruit, allowing ample space for honey and a dusting of crushed pistachios. Enjoy!

Strawberry and Ricotta Toasts

Serves 6

Ingredients

12 slices of toasted baguette
1 cup sliced strawberries
1/2 cup ricotta cheese
1/4 cup chopped pistachios
Honey

Instructions

Spread about a tablespoon of ricotta on each slice of baguette. Top with strawberries and then drizzle with honey. Finally, sprinkle pistachios on top.
